This proposal concerns the design and implementation of a system for monitoring the quality of food production using blockchain technology. Both the supply chain and the final stage of processing have a catalytic influence on the quality of the product produced. The production process involves producers, intermediaries and manufacturing plants that often act utilitarianly (and sometimes competitive with each other), so the creation of a common system of recording all the necessary parameters presents considerable difficulties. Blockchain is an innovative IT technology that allows the development of collaborative services, between equal nodes, without using one of them as central. Data integrity is guaranteed by the cooperation protocol itself and no nodes are required to trust each other in advance. The system that will be developed will monitor the whole course of the ingredients of a food product, using mobile devices. This will certify the location of the components, their management and their movement in the supply chain. At the same time the system will record data on the quality of management in the final production line, during the processing/packaging of the product. All this information will be linked to the packaging of the product, which will be uniquely recognised by the consumer by means of a specific marking. The consumer will be able to easily and quickly withdraw all relevant product information on his/her mobile phone before making his purchase. The system will be implemented on an actual production line of packed food products, with a view to its full techno-economic evaluation. On the one hand, the proposed system offers the consumer considerable information and choice of the best product, while on the other it enables companies that invest in quality production processes to gain a direct competitive advantage on the market.
