ValBioTecCynara aims to promote the economic valuation of thistle by evaluating the natural genetic variability of thistle populations distributed throughout the Alentejo. The use of this knowledge, in terms of identifying desired biochemical profiles, for new biotechnological applications, combined with the traditional appreciation of thistle flowers in the production of PDO cheeses, will provide a high added value to the thistle.
