EcoMeat3G: What quality of beef produced in grassland systems with inputs and means of predicting it?

The overall objective of this project is to characterise and then predict the quality of beef produced in low-input herbager systems using an innovative methodology from Australia (‘MSA’) currently being developed in Europe. Since the results obtained by the MSA are based on the assessment of meat quality by “naïve” consumers, they will be compared with those obtained conventionally, either with mechanical measurements or by sensory analysis with a jury of trained experts. They will also be linked to the muscle characteristics of the animals studied. This project will be based on multidisciplinary experimentation at the scale of the breeding system to test two innovative strategies to facilitate the fattening of grass animals with minimal inputs: the cross between rustic Salers cows and males of the Angus breed (early grassbreed) and (ii) the mix of species (bovine, sheep). This multi-annual experiment with several partners in the region allows a multi-critical evaluation of the livestock system (technical, economic, environmental, workload, animal health and product quality performance). The data produced will contribute to a European database aimed at facilitating the deployment of the MSA system in Europe, including for low-input herbager systems.
