This project specifically concerns the construction of the quality of Burgundy wines through transdisciplinary programmes involving not only experimental sciences (physiology, microbiology, climatology, physico-chemistry, sensory analyses...) but also the human and social sciences (communication, history, sociology, linguistics, economics...). This positioning is unique in France by its federative ambition combined with the creation of a regional competence centre and the identification of the vineyard and wine domain among the specialisation priorities for the University of Burgundy.
