Building a business ecosystem of food waste (PAJATSO)

The overall goal of the Pajatso project is to promote the reduction of waste through new technologies and socio-cultural change, in line with the National Food Waste Road Map. These measures will also support the achievement of the results of the reform of the sustainable food system, which have been presented. The EPKE Action Plan. The project is a follow-up to the systematic development process that started with the implementation of the Ecowaste4Food project in South Ostrobothnia in spring 2017. The aim of the PPAJATSO project is 1) to build a regional business ecosystem of food waste, which, by combining different resources, can contaminate new business opportunities related to reducing waste; 2) Develop, conceivably and demonstrate new digital solutions for reducing food waste3) Developing operating models and tools to systematically strengthen the effectiveness of food waste reduction development activities and know-how in food services. The development work carried out in the PAJATSO project is organised in accordance with the above-mentioned work spacing approach to three. The content of the workpackages is based on the experience gained through the Wasteless project and the resulting understanding of the multiple opportunities, as well as the challenges and pitfalls involved in reducing food waste. In addition, the objectives and measures of the PAJATSO project have been aligned with the discussions that the SCR and Luke’s food waste team have had during the preparation of the PAJATSO project for the period from 1 August 2021 to 31 December 2022, and its implementation is carried out by the SC-Research research unit of the University of Vaasa (the principal developer), the Natural Resources Institute Luke and the City of Lapua. The project consists of three work packages: TP1 Automation of food waste measurement, TP2 Food waste method bank and TP3: Distribution mechanisms for food waste solutions.The concrete outputs according to the target setting of the project are seuraavat:Työpaketti 1: Automation of Food Loss Measurement1) New prototype of prediction model that allows automatic measurement of food waste, with algorithms and manual downloadable under the MIT license in GitHub2) smart scale demonstrationsWork package 2: Method bank to reduce food waste1) The new model of food waste recording library and its technical implementation demo version2) Toolkit for systematic food waste management (3) A new model for persuading technology and planning and a demo version of its technological implementation, which can promote a voluntary change in attitudes and behaviour related to food waste (2) A demo version of a digital collaborative platform through which the tools and best practices of the waste map can be effectively disseminated and promoted in the food waste business ecosystem and the sustainable food system operator network3) Communication and training materials for catering servicesThe living and constantly updated national road map provides a solid foundation for the regional ecosystem developed by the PAJATSO project, which is responsible for ensuring that the business field in the South Ostrobothnia region becomes aware of the multiple business opportunities associated with reducing food waste.
