Development of biorefining technologies for berry pomace by developing and commercialising innovative products

The aim of the proposed project is to intensify the activities of KTU Food Science and Technology Centre of Excellence for the development, testing and commercialisation of biorefining technologies for R & D-based berries marc, by creating innovative fibre products and adapting them to improve the nutritional value of food products and to provide additional health beneficial properties. As part of this project, three fibre products with different properties, targeted depending on their use in food or beverage production, will be developed by successively applying and researching the complex extraction and enzymatic treatment of fibre from berries. The planned result of the project is three patent applications: fibre from berry marc with hyperglycemic properties and hypocholesterol effects; microcapsules with conrolent release of probiotics and prebiotics in the digestive tract; prebiotic oligosaccharides from berry marc intended for the diet of older people.
