The invention describes feeding procedures for the use of compound feed for functional food production. Feed and feed supplements for use in animal feed during the rearing of the species of barramundi (Lates ca/ca/ifer) have a positive influence on the fatty acid composition of fish meat, the content of arachidonic acid (ARA), eicosapentenoic acid (EPA) and docosapentaenoic acid (DHA) through appropriate procedures. Food materials produced according to the invention may be suitable for the prevention of myocardial infarction in primary prevention or secondary prevention. Fish meat enriched with arachidonic acid+docosahexaenoic acid may be suitable for beneficial influence on foetal and early postnatal development. The procedure shall comprise at least two successive stages: Section I: feeding of juveniles with a high protein and low fat content, thereby reducing the levels of saturated and un monosaturated fatty acids in fish meat relative to the weight of the fish and Section II: feeding of juveniles with an increased fatty acid content for one or more long chains of polyunsaturated fatty acids (LcPUFA), thereby depositing one or more LcPUFA fatty acids in fish meat.
