Large-scale and functional valorisation of fish residual flows to valuable raw materials

Within this knowledge development project, consortium partners Living Foods B.V., Zuidema Projectmanagement, Fennema Food Development, Veltman Vis Service B.V., Feed Innovation Services B.V., Visafslag Lauwersoog B.V. and Universal Energy Solutions B.V., assisted by Asqa Subsidies B.V., research into the development of new knowledge for the large-scale and functional valorisation of fish residual flows and aquaculture residual flows into valuable raw materials and semi-finished products. The residual flows that occur in this industry are very diverse. In fisheries, the residual streams consist mainly of undersised fish and by-catch of less or unwanted fish species, shellfish, crustaceans and molluscs (such as jellyfish). In the fish processing industry, fish waste means the parts of the fish that are not further used during the different processing steps and the residual streams consist mainly of cutting waste, hides, heads, bones, fins and too small fish and crustaceans. As long as the fish waste remains in the cold chain and spoilage is avoided, there are probably many possible valorisations. Possible uses of these residual streams are very diverse, such as: •Processing fish skins into fish skins;•processing fish skins into collagen; •Processing into lime powder;• Large fish heads and maingrates drying for various uses in food;• Fish liver processing into paté;•Certified raw material for pet food;• Fresh fish products for pet food (also reward products for pets);•High quality fish meal for use in feed for young piglets and aquafeed;•High quality fishmeal for pre-starter feed for broilers; •vetex traction to obtain high-quality oil for use in food;•fish residual streams enzyme treatment into a product with a large proportion of the protein converted into peptides with antibacterial action;•processing enzymes from various residual streams in various pharmaceutical products;•processing cutting waste in food applications to be developed.
