Medical and technological advances have increased life expectancy globally and in the 20th century there was an increase in human longevity by as much as 20 years. The fastest growing segment of the older or senior population is that of people over 80. Population growth presents great challenges to maintain the quality of life of the elderly, among which here highlights the difficulty of maintaining healthy and balanced nutrition throughout this stage of life. The objective of the SENIORMEAT project is to develop new cured meat products with a healthy nutritional profile (less fat, less salt), with optimised texture to facilitate their consumption and acceptance by the senior population (+ 55 years) and that by incorporating functional ingredients improve the health status of this group of consumers. To ensure that the products have a healthy nutritional profile, salt reduction strategies will be carried out based on the use of substitutes, previous treatments on meat that replace the technological functionality of the salt, the use of other salts without sodium as well as the use of natural aromas. The achievement of the objective of the SENIORMEAT project will be achieved thanks to the complementarity of the companies and Technological Centers that make up the consortium: — Son of JOSÉ MARTÍNEZ SOMALO, S.L. (hereinafter MARTÍNEZ SOMALO), a company selling cured crude products. Coordinator of the project, will participate in the design and pre-industrial scaling of the new cured crude products, and once the project is finished, he will commercialise the new range of products — DIASA INDUSTRIAL, S.A. (hereinafter, DIASA INDUSTRIAL), a marketing company for additives, aromas and ingredients for the agri-food industry. It will participate in the development and subsequent marketing of the ingredients necessary for the formulation of the products. — TECNALIA RESEARCH & INNOVATION Foundation (hereinafter TECNALIA), applied research center whose objective is the scientific and technical development of collaborating companies and society in general. It will participate in the selection and adaptation of the ingredients, for their introduction in cured raw meat products. — Association FOR RESEARCH DEVELOPMENT AND INNOVATION OF AGROALIMENTARY INDUSTRIATION (hereinafter CTIC-CITA), a technological center aimed at the search for concrete and multidisciplinary solutions for the agri-food sector. It will participate in the design of new formulations, and in the adaptation of technological processes, to obtain the new products. Thanks to the results of the project, MARTINEZ SOMALO, estimates a sales increase of 2 % per year, which could mean, the export consignment, 50 % of the commercialisation of the new product range. For its part, DIASA, estimates its increase in sales, as a result of the results of the project at 1.5 % per year.
