THE INITIATIVE FOLLOWS THE EXPERIENCE GAINED SINCE 2008 AND INCLUDES IMPLEMENTATIONS AND INNOVATIONS THAT AIM TO INCREASE (DOUBLE THE PRODUCTION POTENTIAL 90,000 LITRES/YEAR TO 180,000 LITRES/YEAR), THE OPTIMISATION OF PRODUCTION ACTIVITIES WITH ENERGY SAVINGS (METHANE/STEAM AND ELECTRICITY) OF 30 % COMPARED TO THE CURRENT ONES. THE USE OF LARGER TANKS WILL ALLOW A FURTHER REDUCTION OF THE ENVIRONMENTAL IMPACT (MINOR QUANTITY OF DETERGENTS/LITRE AND CALORIES/LITRE USED FOR WASHING). THE OPTIMISATION WILL CONCERN BOTH THE FURTHER IMPROVEMENT OF HYGIENE AND FOOD SAFETY STANDARDS, AS WELL AS THE ASPECT OF OPERATIONAL SAFETY WITH REDUCTION OF MANUAL ACTIVITIES (INSTALLATION OF AUTOMATIC GRINDING MALT TRANSPORT LINE) INTERVENTIONS AND PURCHASES ALREADY CARRIED OUT.
