The DILLON distillery, located in Fort-de-France since 1779, produces agricultural rum AOC Martinique. It offers its products on the local and national market. Since 2006, the companies DILLON and DEPAZ have merged and the new group takes the name DISTILLERIE DILLON SAS. Distillation activities are transferred to the DEPAZ site in Saint Pierre. The production system is based on 2 sites: — The Saint Pierre site is responsible for the upstream manufacturing process (sugar cane grinding, cane cutter, shredder, 4 mills), recovery of cane juice and mixing with water to obtain the vesou, fermentation for 24 to 36 hours, distillation of musts obtained (separation of alcohol from the aqueous phase by spraying and condensation) to obtain white rum, put in ageing part of the white rums (7 to 10 %) by ageing in oak barrels for at least three years in order to obtain old rum. — The Fort de France site receives rum bulks from Saint Pierre and operates the reduction, filtration, bottling after AOC certification and storage phases. The operation consists of taking into account additional costs related to handling and freight for: — export of rum and old rum – import of: yeasts, flavourings, preparations odoriferous substances, in additions, stoppers, cartons, boxes, boxes, boxes, cartons, labels, bottles, capsules, etc.
