The KAAZ project (a Cheese Alternative, Craft and Pure Made) aims to develop and market an innovative plant-based cheese alternative. Through a collaboration between Studio Fava, Bamboo Brands and the HAS green academy, the aim is to create a product that approximates the taste, texture and nutritional value of traditional cheese, but based on sustainable, local and plant-based ingredients, and using traditional processing methods. The project aims to bridge the gap between the growing demand for dairy-free and environmentally friendly alternatives and the current supply of plant-based cheese. The project contributes to the development of sustainable food innovations, stimulating healthier diets and reducing the environmental impact of food production. In addition, the project offers opportunities for strengthening the economic position of the Southern Netherlands as a leading hub for food technology and innovation.
