The entrepreneurs in the FABAFOOD project are developing a new field bean variety, suitable for processing into products for human consumption. There is a growing need to get protein from environmentally friendly and plant-based sources. Vegetable proteins are largely obtained from soy. Soy does not thrive well in the Dutch climate and does not offer a future-proof solution because of a negative ecological footprint. An alternative protein crop is the field bean, which is suitable for the Dutch climate. The field bean has the highest protein yield per hectare in the Netherlands compared to other protein crops such as soybean and chickpeas. However, the problem is that current field bean varieties have been selected for feeding livestock. To make the quality, taste, color and texture of these beans suitable for human consumption, a lot of time and energy is needed.
