Meal producers value local foods higher and serve more meals based on local. The change in behaviour is driven by knowledge-driven demand. By working with procurement and purchasing on the one hand and an active knowledge transfer in the kitchens, the opening of new or expanded markets is made possible. This strengthens the competitiveness of the chain. Waste will be seen as a new sustainable raw material, instead of just waste. Establishes test kitchens that enable innovation, which strengthens competitiveness.
