Northern Sweden needs more and stronger food and beverage actors both to create a more sustainable food system for resilience and food preparedness in a troubled time. By creating a FoodLab, conditions are created for increased food production as entrepreneurs get a place for collaboration and innovation. The focus is to establish a physical FoodLab in Älvsbyn. The location Älvsbyn was chosen because it is a small rural town close to good raw materials, with active food business owners and an industrial party in the form of Polarbröd. The project will work with, in addition to establishing a physical foodlab, method development for innovative collaboration, knowledge enhancement and networking around sustainable food. The project aims to raise the knowledge of actors around sustainable food and strengthen the culture and traditions of the place and focus on developing methods for collaboration between actors, research and international partners.
