The objective of the project”. „Demonstration of a fully automated efficient technology to obtain high added meat snacks which are a breakthrough in the industry; there is the development of world-innovative kabanos meat snacks from the segment “bdquo;snack”;amp;chips” and innovative technology for their production. Implementation of the project results will take place by introducing the results of development work into the Applicant’s own business activity. Meat snacks developed under the Project will be characterised by a high protein content (up to 60 g/100 g of the product), reduced fat content (min. 16 g/100 g of the product) and high meat (up to 250 g/100 g of the product). Due to the snack nature of the product, a new packaging will also be developed for easier opening and consumption of the product „on-the-go;amp;rdquo;. The possibility of creating high added value meat snacks will be the result of an integrated and fully automated process to eliminate benzopyrene from the product harmful to human health and the need for alginate coating. The Project’s objective will be achieved by carrying out the following R & D work: • developing a new recipe of stuffing to eliminate smoking and alginate coating, • integration and automation of meat snack drying process, allowing shorter time for heat treatment of the product, • create a special control software that allows the process parameters to be adapted to a number of variables.
