Process development of a non-chemical production of natural proteins (food)

The Phytamin project is designed to further explore plant protein research, and develop innovative products and at the same time test them for feasibility in practice, eg. as an alternative to meat. The project is based on 3 foundations that will be processed at the same time: 1. In collaboration with universities and technical colleges, the issue of extracting plant proteins as a raw material (concentrate or isolate) and making them available to the food industry and food processing companies is being investigated, the result of which is to be economically viable for an industrial sector le processing by process engineering in the region tested. All products resulting from this are first tested in small plants. 2. Results from research are tested directly for their suitability for use in product development at the Metzler dairy. 3. In order to ensure the marketability and market potential of this project, a market analysis and a marketing strategy will be developed at the same time. The application possibilities of our results are thereby constantly examined and questioned. At the end of the 3 years, these 3 foundations are to create the basis for innovation.
